La Cave Wine and Food Hideaway Opens at Wynn Las Vegas
A stylish new wine bar on The Strip offers savory small plates and global winesSteve Wynn and restaurant impresario Michael Morton have opened La Cave Wine and Food Hideaway, nestled inside Wynn Las Vegas. Inspired by the Latin phrase "in vino veritas" (in wine there is truth), La Cave offers an escape where guests can enjoy a modern American small plates-menu from Executive Chef William DeMarco.
The wines at La Cave will surprise and please connoisseurs and novices alike. Guests can sample a 2000 Harlan Estate Bordeaux-blend from Napa Valley, California, a boldly flavored domestic wine, along with other interesting selections such as a 2009 Mollydooker Shiraz Blue Eyed Boy from South Australia.
"La Cave's wine list offers a variety of wines that encourage guests to approach wine from a fresh perspective and explore new varietals," says Rober Wright, La Cave's wine director.
Open for lunch, dinner and late-night indulgences, La Cave's menu features an array of international influences to complement Wright's wine pairings. The menu is divided into categories based on the dishes' origins: From the Sea, Farm, Oven, Garden, Grill, Butcher, and cheeses From The Cow, Sheep or Goat.
Flavorful flatbreads such as ham, egg and cheese with quail eggs and Neuskes bacon are ideal for sharing, while vegetable dishes including salt-roasted beets with whipped goat cheese and pistachio entice meat and veggie lovers alike. Creative seafood dishes including hamachi with pickled chilies and candied lemon zest join meat and poultry options such as horseradish and parmesan-crusted rack of lamb to cater to a range of tastes. Dishes from the grill such as Angus mini burgers with mushroom and chipotle mayo further round out the menu and satisfy cravings. In addition, guests can select from a variety of meats and cheeses to create their own charcuterie board.
Designed with 555 International, La Cave is comprised of three distinct spaces–"the cave," main dining room and garden lounge. Guests are greeted by a glass entryway surrounded by rich wood panels. The cave features cobblewood oak flooring, low vaulted ceilings and a large sign made of red LED lights that reads "In Vino Veritas." An arched steel-metal gate features Latin phrases celebrating food, wine and the arts, evoking the feeling of an exclusive wine cellar in Tuscany while providing a glimpse into the main dining room.
Spacious and low-lit, the dining room boasts a center bar outfitted in a herringbone pattern and bookmarked by two wine rooms. A ten person "share table" features a walnut table perched atop two large wine barrels that allows for intimate wine tastings and special events. The garden lounge recalls an oversized living room with mix-and-match custom-made chairs and tables, at which guests can unwind with a glass of wine and small plates from DeMarco.
At La Cave, guests will find a one-of-a-kind destination that invites them to experience the meaning of in vino veritas in a sophisticated yet relaxed setting.
Lakeside Grill Now Open at Wynn Las Vegas
Award-Winning Chef David Walzog introduces updated American classics in a vibrant setting on the Lake of Dreams
Lakeside Grill is now open for dinner nightly, bringing a lively new dining destination to Wynn Las Vegas. Situated on the picturesque Lake of Dreams, Executive Chef David Walzog offers modern twists on classic American dishes in a striking and stylish setting. Lakeside Grill is the second restaurant at Wynn helmed by Walzog, who has garnered critical acclaim for his cuisine at SW, the resort's signature steakhouse.
The menu at Lakeside Grill is inspired by the diverse array of popular dishes that have come to characterize modern American cuisine, to which Walzog applies an inventive touch. Appetizers include small plates meant for sharing, soups, salads and an expansive selection of hot and chilled shellfish. Entrées include pizza and pasta options such as Tomato Pizza with San Marzano tomato sauce, pecorino and basil and a decadent Butternut Squash Agnolotti with sage brown butter. Main courses are divided by preparation–grilled, oven roasted, poached, braised and charbroiled–and include tempting offerings from the land and sea.
Guests of Lakeside Grill can end their meal on a sweet note with desserts from Executive Pastry Chef Kimberly Valdez. A special "dim sum" cart offers desserts divided into nutty, chocolate, creamy and fruit categories–a playful approach that encourages conviviality among diners.
Located in the space formerly occupied by Daniel Boulud Brasserie, Wynn's Executive Vice President of Design Roger Thomas has updated the interiors to lend Lakeside Grill its own distinct character, while retaining design elements such as the 17th-century mosaic-tiled floor. The restaurant is outfitted in white materials such as Carrara marble, metals and leather for a bright, modern feel, complementing the beautiful view of the Lake of Dreams beyond its windows. The design marries contemporary and antique elements–vibrant orange lacquer and white acrylic surfaces juxtaposed with neo-classical sculptures and 19th-century falling angels adorning the walls.
Lakeside Grill offers an experience that blends fine dining with the fun and energy of a lounge setting, where guests can enjoy Chef Walzog's imaginative takes on classic American dishes in a lively and dynamic atmosphere.

Wynn Las Vegas and Encore continue to set the bar for luxury and excellence in Las Vegas, earning top honors from the 2011 Forbes Travel Guide Star awards (formerly Mobil Travel Guide Star awards). Wynn and Encore are two of only 54 hotels in the world to receive Five Stars for 2011 Five Stars in hotel and spa.

The Tower Suites at Wynn Las Vegas has earned a Forbes Five Star rating for five consecutive years, and the Tower Suites at Encore has received the Forbes Five Star award in its first two consecutive years in operation.
Wynn Las Vegas is also the only casino resort in the world to make Forbes Award history by earning Five Star ratings in every category–Hotel, Restaurant and Spa–for three consecutive years. The Tower Suites at Wynn Las Vegas, Alex restaurant and The Spa each earned Five Star recognition in 2009, 2010 and 2011 for their achievements attaining the highest standards of excellence.
The Spa at Wynn Las Vegas and The Spa at Encore are among only three spas in Las Vegas to be recognized with Forbes Five Star award. Only 20 spas in the world have attained this distinction in 2011. Previously, The Spa at Wynn Las Vegas garnered acclaim from the Forbes Travel Guide with three consecutive Four Star award wins in 2006, 2007 and 2008, and Five-Star awards in 2009 and 2010. The Spa at Encore also received a Forbes Five Star award in its first year of operation for 2010.
The dining experiences at Wynn Las Vegas were also recognized by the Forbes Travel Guide. Alex, Alessandro Stratta's namesake restaurant, received the Forbes Five Star award for its fifth consecutive year, and was one of only 23 restaurants in the world to earn the honor for 2011.

Award marks fifth consecutive achievement for Wynn and ALEX, second for Encore
Wynn Las Vegas and Encore have been awarded the American Automobile Association's (AAA) 2011 Five Diamond Award. This marks the fifth consecutive year in which Wynn Las Vegas and ALEX have received the highest rating, and the second year for Encore. Less than one-half percent of more than 31,000 properties receive Five Diamonds, and less than one-quarter percent of over 26,000 restaurants achieve this distinction.The AAA Five Diamond Award is one of the most esteemed honors for the hospitality industry. This fêted distinction is attained only by those establishments which significantly and consistently exceed AAA requirements.

This is especially challenging during an economic slump, such as the one we are all experiencing in Las Vegas at the present time. Receiving the Five Diamond award once again is enormously gratifying and in particular very reassuring to all of us in the company. AAA describes Five Diamond properties as "establishments that reflect the characteristics of the ultimate in luxury and sophistication; accommodations that are first class; the physical attributes extraordinary in every manner." AAA annually evaluates more than 60,000 lodging establishments and restaurants, and only one third of one percent of the over 31,000 properties approved by AAA achieve the prestigious Five Diamond designation.
Wynn Las Vegas Unveils Newly Renovated Rooms
Wynn Las Vegas continues to set the bar for luxury and excellence in Las Vegas and unveils the first completely renovated resort rooms at Wynn. Designed by Roger Thomas, Executive Vice President of Design for Wynn Design and Development, the rooms feature rich new finishes–including wallpaper, carpets, chairs, couches and lamps–while maintaining the functionality, spaciousness, configuration and casually elegant residential quality that has become the hallmark of Wynn resorts.
